To discover a truly unique gluten free product in the free from sector is a rare joy and Nomad Health represent just that. Partners in life and work, Marianna and Keith one coeliac and one gluten intolerant, have created Superseed and Supergrain pastas that are all gluten free. Observing through their work as gardeners the opportunity to make pasta from novel ingredients and grains, they utilise them for their nutrition, diabetic qualities and gluten free-ness.
Quinoa, millet, sorghum, flaxseed, green banana and sesame are made by hand in Hungary into chubby penne tubes or spirals to create unusual coloured pasta – the flaxseed is black, turning dark grey on cooking, the millet is a great mustardy yellow, and the green banana is a khaki green – great fun for the kids (and adults alike). Because of the ingredients used, cooking time is quick, between 3 and 7 minutes depending on the type and resembles fresh pasta on eating.
To be honest not much of the flavour remains after cooking, which for such a healthy pasta is a real bonus. These are gluten free, vegan, suitable for diabetics and really very good pastas. A pleasant change from the standard offering, with all that nutrition to boot and supporting a small, artisan company – it ticks all the boxes for this site.
